Caribbean prawn and mango soup
Prep and cook time 25 MINS Serves 2
Ingredients
• 2 tsp vegetable oil • 4 spring onions, trimmed and chopped • 15g root ginger, peeled and finely chopped • 400g can chopped tomatoes • 225ml vegetable stock • 1 tsp jerk seasoning • 150ml mango juice • Half 250g microwave pack ready-cooked basmati and wild rice • 110g cooked peeled prawns • 75g fresh prepared mango, finely chopped
Method
1 Heat the oil in a saucepan and gently fry the spring onions and ginger for 2 minutes until softened. Stir in the tomatoes, stock and jerk seasoning. Bring to the boil and simmer gently for 5 minutes.
