Caribbean prawn and mango soup

Prep and cook time 25 MINS Serves 2

Ingredients

2 tsp vegetable oil 4 spring onions, trimmed and chopped 15g root ginger, peeled and finely chopped 400g can chopped tomatoes 225ml vegetable stock 1 tsp jerk seasoning 150ml mango juice Half 250g microwave pack ready-cooked basmati and wild rice 110g cooked peeled prawns 75g fresh prepared mango, finely chopped

Method

1 Heat the oil in a saucepan and gently fry the spring onions and ginger for 2 minutes until softened. Stir in the tomatoes, stock and jerk seasoning. Bring to the boil and simmer gently for 5 minutes.

Stir in the mango juice and rice and simmer for a further 5 minutes. Stir in the prawns and
