Spicy mincemeat

PREP 10 minutes REST TIME At least 24 hours MAKES 4 jars

YOU WILL NEED

✔ 225g seedless raisins
✔ 110g sultanas
✔ 110g apples, peeled and cored
✔ 110g mixed peel
✔ 50g beef or vegetarian suet
✔ 225g currants
✔ 110g soft brown sugar
✔ 1 tbsp golden syrup
✔ 1 tsp mixed spice
✔ 1 tsp cinnamon
✔ ¼ tsp nutmeg
✔ 4 tbsp brandy or whisky
✔ Juice and zest of 1 lemon

Blitz the raisins, sultanas, apple, mixed peel and suet until coarsely minced. Leave the currants whole.

Mix all the ingredients together well, cover the bowl and let it rest, stirring occasionally over the course of 24
