Pork larb with rice noodles

PREP + COOK TIME 20 MINS SERVES 4

200g rice stick noodles
1 tbsp peanut oil
600g pork mince
10cm stick lemongrass, white part only, finely chopped
1 garlic clove, crushed
2 tsp sambal oelek
2 tbsp lime juice
2 tbsp brown sugar
1 tbsp fish sauce
3 spring onions, thinly sliced
Salt and black pepper
1 long red chilli, thinly sliced
¼ cup loosely packed coriander leaves Lime halves, to serve

Cook noodles according to the packet directions; drain.
