Big roasted vegetable lasagne
SERVES 6
1 aubergine, diced
2 red onions, roughly diced
3 red peppers, deseeded and roughly diced
280g cherry tomatoes, chopped
2 tbsp vegetable oil, plus extra for coating
Salt and black pepper
1 garlic bulb
1 large courgette cut into bite-sized pieces
1 tbsp tomato purée
A good bunch of basil, plus extra to top
450ml cold whole milk
20g unsalted butter
20g plain flour
A good pinch of English mustard powder
100g mature Cheddar cheese
60g vegetarian Parmesan-style cheese
