Roll up, roll up!
Have you ever dreamed of running away and joining the circus? Well, Nell Gifford actually did it – at least, she founded her own! Giffords Circus performed for the first time at the Hay Festival in 2000 and was soon touring South-West England during summer, in vintage vans, performing to sell-out crowds. The idea for its sister restaurant, Circus Sauce, came a little later – as Nell explains, eating well is very much a part of the circus lifestyle! Co-authored with Circus Sauce’s head chef Ols Halas, in Giffords Circus Cookbook, Nell shares some of the delicious recipes cooked up for guests at the circus and its performers alike many of which use foraged, seasonal ingredients. Sadly, Nell, a talented horse rider, passed away from cancer last December, aged 46.
