he cultures of the Caribbean converge in South Florida, and all those island nations produce rum. Premium rum, however, only emerged as a category recently, and mostly as a response to market demand. As consumer appreciation for finer spirits increased, aged rum became an alternative to single malt Scotch, small-batch bourbon, Cognac, and high-quality tequila.
