Bigos
No one knows for certain when bigos was invented, but early iterations of Poland’s national dish can be found in cookbooks dating back to the 17th century.
The prevailing story, however, is that this comforting stew was first concocted by wealthy hunters, who would cook the results of their day’s hunt with exotic spices. A similar tale can be found in Adam Mickiewicz’s 1834 epic poem Pan Tadeusz , in which aristocrats enjoy a game dish of “wondrous taste, colour and marvellous smell”.
