PLANTING THE SEED OF CHANGE

JANUARY SEEMS A lifetime ago – the extent of 2020’s challenges were yet to be revealed. Back then, I attended Fruto, an annual symposium founded by Brazilian chef Alex Atala and cultural curator Felipe Ribenboim in São Paulo, and its messages on waste and how we can fundamentally change our attitudes now seem more prescient.

This was no chef parade. The 24 sessions featured just one chef alongside the likes of US archaeologist Dr Bill Schindler, who spoke on the evolutionary kitchen, and Cuban environmentalist and scientist Humberto Ríos Labrada, just one of the Latin American contingent to break into song to make their case.
