EAT-TWICE SUNDAY LUNCH

As a chef, you’re trained to think ahead. You might be cooking Monday’s lunch service, but you’ll be thinking about what prep needs to be done for the next day, and what you’ll need to order for the weekend. With this in mind, I’ve created this lazy weekend lunch that is just as good the next day, and saves you cooking twice. I love cooking, but if there’s a chance to get in the garden while the sun’s out, I don’t want to be spending as much time in the kitchen – the sun’s gone down by the time I get out there! Here, everything’s done the day before, so all you need is some sunshine – which is the one thing I can’t guarantee, I’m afraid. Enjoy! Tom
