Pink sparkle
Is it a dessert? Is it a cocktail? It’s both – and it’s delicious too!
SERVES 4 PREP 30 MINS
✱ 600g pink rhubarb, trimmed and cut into chunks
✱ 175g caster sugar
✱ 6 leaves of gelatine
✱ 50ml Prosecco, or any sparkling wine
Put the rhubarb in a large pan with the sugar and 400ml water. Bring to the boil. Stir the mixture, then simmer over a gentle heat for 10-15 mins, without stirring, until
