The first known sweet iced tea recipe appeared in an 1879 cookbook named and called for iced green tea to be served in goblets with two teaspoonfuls of sugar and a squeeze of lemon. Before then, tea was traditionally served hot and unsweetened due to the high price of sugar and the difficulty in attaining ice. Over time, traditional green tea was replaced with black tea, sugar became less expensive, and the modern invention of refrigerators with freezers brought ice to the general public.
