TACOS AL PASTOR contain an irresistible combination of flavorful components: deeply seasoned pork, charred fresh pineapple, warm corn tortillas, and a bounty of lively toppings.

Traditional versions are made by slicing fatty pork (usually shoulder) thin and then marinating it in what is essentially an adobo sauce of dried chiles, spices, and often citrus or vinegar. The marinated slices are then stacked high on a vertical spit and cooked slowly—as they spin around and around—until they’re tender.
