Garden gimlet
Vegetables in cocktails will be a trend for summer, so why not get some of your five-a-day within a gin?
Serves 1 • Ready in 10 mins
50g cucumber, peeled and chopped
10 garden peas (thawed if frozen)
50ml gin (we used Hendrick’s)
20ml Bottlegreen Elderflower
Cordial
to garnish:
3 sprigs of mint
In a shaker, muddle together the cucumber and peas until they have mushed into a thick-textured juice. Hard shake all the ingredients with ice until chilled, then strain into a martini
