Diwali is the Hindu Festival of Lights, celebrated in the fall. On Diwali, people in (firm Indian ice cream) is a special treat, often bought from street vendors. In the old days, most people didn’t have refrigerators. To make kulfi, they ordered large blocks of ice from local factories, cracked the ice into small chunks, and made an ice bath to freeze the kulfi. A freezer makes this recipe a lot easier!
