JERSEY ROYAL NEW POTATO, THYME & CHEESE PUFF TART

Serves 4-6 Preparation time 25-30 minutes Cooking 30 minutes

INGREDIENTS

• 300g/11oz full-fat crème fraîche• 2 tbsp Dijon mustard• Leaves from 4 sprigs fresh thyme, plus extra to serve• Finely grated zest of ½ lemon• 50g/2oz Parmesan or GranaPadano, finely grated• 2 cloves garlic, crushed• Salt and freshly ground black pepper• 350g/12oz Jersey Royal new potatoes, scrubbed and very finely sliced on a mandolin, by hand, or with a food processor attachment• 1 x 320g packet ready-rolled all-butter puff pastry,• Extra virgin olive oil, for brushing• 1 egg, beaten• 50g/2oz goat’s Gouda, other hard goat’s or ewe’s cheese
