Underlining the bold Latin flavors served at the bistro, which debuted in RiNo in November, is one of Schaich’s hallmarks: colorful wallpaper in a playful pattern, this one with birds of paradise perched among tropical plants. “Foliage is big in international design right now, and brings in that celebratory Cuban-Miami element,” Schaich says. But the greenery-filled tableau is just one of the ways Schaich ushered in the outdoors. Audubon bird prints adorn the walls, faux palm fronds dangle above diners’ heads, and wrought-iron fence scrolls in vibrant hues accent the space. Of course, if you seek actual fresh air, grab a seat on the patio, where ivy-covered walls make the agua frescas and Peruvian cebiche taste even more refreshing.
