GREEN FREEKEH SALAD WITH PEAS, BEANS AND HERBS

Freekeh are young green grains of wheat, that have been dried and toasted. They are cooked and served in much the same way as rice or couscous and can be served hot as a pilaf, or cold in salads. With a delicious nutty flavour, they are a good source of fibre and protein.

SERVES 4-6

200g wholegrain freekeh
125g fine green beans
100g sugar snap peas
100g baby broad beans
100g peas (fresh or frozen and defrosted)
3 spring onions, sliced
50g cashews, toasted
50g pistachios
2–3tbsp chopped mint
2tbsp chopped flat-leaf parsley
Seeds from ½ pomegranate
3tbsp extra virgin olive oil
1tbsp pomegranate molasses
1tbsp lemon juice
Salt and freshly ground black pepper

Rinse the freekeh grains in a sieve under cold running water. Tip
