Pears are hard to catch at their true best – they go from being unripe, tasteless and astringent to mushy, browning and collapsing in no time, but cooking with them ensures their gentle and sweet flavour shines on during autumn.

Pear & prune custard pie

SERVES 6

Pears, prunes and the heavenly scent of vanilla all embedded in a baked custard.

Butter, for greasing dish
200g pitted prunes
4 medium eggs
½ cup sugar Pinch of sea salt
½ cup plain flour
1 cup milk
1 tsp vanilla extract
1 large pear, peeled and roughly choppedWhipped cream, to serve
