Mawa-stuffed Ravioli with Pistachio Basundi

“Sweets are an essential part of our festivals and I believe that there is a deeper science to this. Typically, while prepping for the festivities, or by the time we are done with the arrangements, our energy levels could have dropped drastically for us to actually enjoy ourselves. That’s where sweets come in. They help boost the happy hormones and, naturally, that adds to the festive mood. The Mawastuffed Ravioli with Pistachio Basundi is a tribute to our love for food in general and cuisine in particular, that beautifully adopts and adapts various ingredients and cuisines into its fold, while retaining its identity.”

MAWA STUFFED RAVIOLI WITH PISTACHIO BASUNDI

Difficulty: Intermediate

Serves: 4

INGREDIENTS

For Pistachio basundi

 1 litre full fat milk
 ½ cup sugar
 ½ tsp pistachio essence
 ½ cup pistachio powder
 1 tsp orange zest

For ravioli Filling

 ½ cup mawa/khoya, crumbled
 ½ cup powdered sugar
 ½ tbsp ghee
 ¼ cup mixed dry fruits/nuts, chopped

For ravioli dough

 1 cup of refined flour
 150 ml lukewarm water
 1 ½ tbsps beetroot paste
