Canned soups are brimming with sodium but this recipe contains just 125mg and is great for batch cooking. Don’t forget to mix up the flavour with your own toppers, too!
CREAMY TOMATO SOUP

1kg tomatoes, core removed, quartered, seeds removed

1½ cups coarsely chopped red capsicum
250ml (1 cup) salt-reduced or gluten-free vegetable stock
½ red onion, chopped
¼ cup chopped basil
2 Tbsp light thickened cream
1 Tbsp honey
4 slices wholemeal bread
4 slices tasty cheese
