GOULASH SOUP WITH GNOCCHI
Foxtrot of the meat eaters
This recipe is an old favourite and I usually can’t wait for winter to make it! The carrot here isn’t traditional, but I feel it gives a little body – sometimes I also stir in a cup of frozen peas.
Ingredients
(enough for 6-8)
2 tablespoons oil
About 1 kg beef goulash
3 onions, peeled and finely chopped
3 large carrots, peeled and chopped
2 garlic cloves, crushed
1 tablespoon smoked paprika
A pinch of caraway seeds
1 tin (410 g) cherry tomatoes
About 1 ℓ beef stock
Salt and freshly ground black pepper
400 g gnocchi
Sour cream to serve (optional)
