Honey-Glazed Duck With Rosemary-Roasted Grapes & Prosciutto-Wrapped Potato Wedges
MANY home cooks find the idea of roasting a duck intimidating, but this recipe makes it just as simple as roasting a chicken!
Serves 8 – 10 A LITTLE EFFORT 3 Hrs
INGREDIENTS
Prosciutto-Wrapped Potato Wedges
700g Parboiled potatoes, some cut into wedges and others cut out using a small star-shaped cookie cutter (optional)
Olive oil, to drizzle
Salt and freshly ground black pepper, to taste
140g Prosciutto, cut into strips

1 Medium (1.5 – 2kg) duck, fully defrosted if frozen1 Onion, peeled and quartered3 Cinnamon quills3 Star aniseA handful fresh thyme sprigs¼ Lemon4 Garlic cloves, peeled andA large knob of butter, softened
