SUSHI WITH SPICY SESAME CHICKEN AND AVOCADO
Wholegrain brown rice takes longer to break down in your body than white rice, so this spicy sushi will help your blood sugar levels remain stable throughout the day.
◆ 1½ cups medium-grain or short-grain brown rice
◆ ¼ cup seasoned rice vinegar
◆ ¼ cup white vinegar
◆ 4 sheets nori
◆ 1 Lebanese cucumber, cut into 5cm batons
◆ ½ avocado, peeled, stone removed and cut into 5cm batons
◆ Pickled ginger, wasabi and gluten-free salt-reduced soy sauce, to serve
