BREW YOUR OWN KOMBUCHA

WHITE TEA KOMBUCHA WITH GUAVA NECTAR

Makes About 1 litre

1 litre filtered water or springwater
4 white tea bags or 1 tbs loose-leaf white tea
3 tbs raw or white sugar
3 tbs kombucha starter culture liquid
1 kombucha “mother” (buy it at a health food shop), a little smaller than the size of your palm
125ml guava nectar

PRIMARY FERMENTATION AND BOTTLING

1. To get started, bring 500ml of the filtered water to a gentle simmer.

2. Pour into a teapot or heatproof bowl, add the tea bags or tea leaves and leave to steep for 3–5 mins.

Strain the tea into a heatproof 1.5-litre wide-mouth glass jar and discard the tea bags or tea leaves.
