“I love the sense of occasion you feel when you step inside Bert’s,” says architect Kelvin Ho of the bar and brasserie he created at Sydney’s Newport hotel in 2018, along with his Akin Atelier team and hoteliers Justin and Bettina Hemmes. The impressive 840-square-metre space is made up of a series of rooms with a visual connection to one another, each loosely defined by colours, partitioning and greenery. “I think what sets Bert’s apart – aside from the obvious – is that you can experience it differently every time,” surmises Kelvin.
