Serves 4 to 6 (Makes 1 pound)
The longer the dough rests in step 2, the easier it will be to roll out. When rolling out the dough in step 4, be sure to avoid dusting the dough with too much flour; that may result in the dough snapping back into shape as you roll. Cook the noodles within 1 hour of cutting them.
2 cups (10 ounces) all-purpose flour
2 large eggs plus 6 large yolks
2 tablespoons extra-virgin olive
