Leek quiche
By using fine semolina flour, you can create a filling that holds its shape and eliminate the eggs.
½ sheet of shortcrust pastry
½ onion, diced
½ leek, roughly chopped
½ vegetable stock cube
½ mug of boiling water
¼ mug of semolina flour
Olive oil
Salt and pepper
Preheat oven to 190C.
