She recruits immigrant women, many age 50 or older, to lead cooking lessons and tours in their own (lentil and rice porridge topped with sweet fried onions) and bake (semolina shortbread cookies stuffed with dates and nuts). In Manhattan, a Japanese immigrant teaches , or waste avoidance, while making —burdock root simmered in soy sauce, mirin (rice wine), and dashi (fish broth). Up to six guests can join a class, and each participant leaves with a shopping guide and recipes.
