ELDERFLOWER POWER

When the hedgerows are filled with creamy, frothy elderflowers, it’s time to forage for this gorgeous gift from nature. The scent is incredible: floral and heady, they smell of summer. Fill your baskets with fragrant blossoms to make your own drinks, body products and chocolates.

If you can, pick elderflowers before noon on a sunny day when they are at their most fragrant. Pick whole heads, shaking gently to dislodge any insects. Using your fingers, carefully strip the frothy blossom from the stalks – it usually comes away very easily. Discard any brown flowers which can impair the flavour of your creation.
