Most of the peas grown commercially in Australia are picked and frozen. Freezing preserves all the goodness of the pea as it’s done very soon after picking.
In the paddocks around where I live in northwest Tasmania, pea harvesting machines generally work through the night, picking and processing pods in one synchronised movement that sees the entire plant harvested and the peas stripped from their pods and deposited in hoppers ready to be trucked to the factory where they’re frozen.
From picking to bagging the frozen pea is just a matter of hours. The spent pea plants and pods are used as mulch or returned to the field as fertiliser.
