What’s the first thing you think of when you hear the word “pecan”?

Pecan pie? We knew it! Can you hear the pecans quivering in their shells, shaking their fists with fury? It’s time to cut these nuts some slack; there’s so much more to their profile than Nanna’s outdated pecan pie, as you’re about to find out.

Rich and distinctive in flavour and texture, pecans come from the pecan tree (Carya illinoinensis), a large deciduous tree belonging to the hickory family. Native to the United States, pecans grow up to 20–40m in height and have a spread of 12–23m. With trunks growing to a huge 2m in diameter, it’s no wonder they’ve been in commercial production in the US for more than 130 years. These trees are in it for the long haul, that's for sure.
