    Just starting out on your own? Heading to that college dorm? Maybe you’re an Empty Nester thinking of downsizing or a Retiree heading to that dream boat or motor home? Then, THIS is the book for you.

    Hi, my name is Susan Otsuki and I am a retired International Flight Attendant. I have been commuting out of small maid’s quarters/ mother-in-law/ohana apartment without a kitchen for years.

    How do I do it? Great question. Let me show you how to get started, prepare delicious and healthy meals (for one or two or more). In addition I’ll offer some Travel Tidbits, which is really just advice from all my airline adventures, ideas with Tips of the Day and much more.

    So, sit back, relax and . . . . as everyone says as we are cleared for departure and the engines rev up . . . . here we go . . .

    PREPARE FOR TAKEOFF

    Before we can get started cooking and living large in a small space, let’s go shopping. You’ll need what I call the basic six key appliances to start out:

    • a fridge—even a tiny one—with a small freezer

    • a non-stick rice cooker/steamer

    • a stove or a hot plate

    • an indoor grilling machine

    • a mini-food processor

    • a small microwave

    You won’t use the microwave too often, but it will come in handy occasionally. If you can’t get all six at once, start out with the fridge and the rice cooker/steamer as your first two purchases.

    These six are just the basics; as time goes along, you can add to your appliances—a small toaster oven and a slow cooker will come in handy—if you have the space. You may want to look for a French press coffee maker, too. It will make delicious coffee and is definitely space-efficient.

    Aside from the appliances you’ll need some tools:

    • a plastic water-filter jug

    • a small plastic cutting board (One that rolls up will work great and save space.)

    • a knife (I love the serrated type, as you don’t need to sharpen them.)

    • a wooden spoon

    • a plastic spatula

    • a can opener

    • a corkscrew

    • a vegetable peeler

    • a potato masher

    • a small box grater

    • a small microplane (If you can’t find this, you can use your box grater, but it really saves time on cleanup.)

    • a small whisk
